Ingredients
1 tbsp olive oil
1 lb lean ground beef
1/4 cup low-sodium soy sauce
2 tbsp gochujang (Korean chili paste)
2 tbsp brown sugar (packed)
1 tbsp rice vinegar
1 tbsp grated fresh ginger
2 cloves garlic, minced
1 tsp toasted sesame oil
1/4 cup chopped green onions, plus more for garnish
Cooked white or brown rice, for serving
Sesame seeds, for garnish (optional)
Instructions
Step 1: In a small bowl, whisk together the soy sauce, gochujang, brown sugar, rice vinegar, grated ginger, and minced garlic. Set aside.
Step 2: Heat olive oil in a large skillet or wok over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until thoroughly browned and no pink remains, about 5-7 minutes. Drain any excess fat.
Step 3: Reduce the heat to medium. Pour the prepared sauce over the cooked ground beef. Stir well to coat the beef evenly. Let it simmer for 2-3 minutes, stirring occasionally, until the sauce has thickened slightly and the flavors have melded.
Step 4: Remove the skillet from the heat. Stir in the toasted sesame oil and 1/4 cup of chopped green onions.
Step 5: Serve immediately over cooked rice. Garnish with additional chopped green onions and a sprinkle of sesame seeds, if desired. Enjoy your quick and flavor-packed korean ground beef bowl!
Notes
For best results, use lean ground beef (85/15 or 90/10) and drain excess fat for a less greasy finish. This dish reheats beautifully and is excellent for meal prep. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
