1 lb (450g) Korean cylindrical rice cakes (tteokbokki tteok or garaetteok)
2–3 tbsp vegetable oil
8–10 wooden skewers
For the Sauce:
3 tbsp Gochujang (Korean chili paste)
1 tbsp Gochugaru (Korean chili flakes)
2 tbsp soy sauce
2 tbsp sugar (or to taste)
1 tbsp minced garlic
1/4 cup water or anchovy broth
For Garnish (Optional):
1 tbsp toasted sesame seeds
2 tbsp chopped green onions

Instructions

Step 1: If rice cakes are frozen, thaw them completely. Soak the rice cakes in a bowl of warm water for 10-15 minutes until pliable. Drain well.
Step 2: In a medium bowl, whisk together gochujang, gochugaru, soy sauce, sugar, minced garlic, and water (or broth) until smooth. Set aside.
Step 3: Carefully thread 4-5 softened rice cakes onto each wooden skewer. Be gentle to prevent cracking.
Step 4: Heat 2-3 tablespoons of vegetable oil in a large non-stick pan or grill pan over medium-high heat. Place the skewers in the hot pan, ensuring not to overcrowd.
Step 5: Cook the skewers for 2-3 minutes per side, turning occasionally, until the rice cakes are lightly golden-brown and slightly charred in spots. They should also feel soft and chewy.
Step 6: Reduce the heat to medium-low. Pour the prepared sauce over the skewers in the pan. Use tongs or a spoon to thoroughly coat each skewer with the sauce.
Step 7: Let the sauce simmer gently for 2-3 minutes, stirring occasionally, until it thickens slightly and clings beautifully to the rice cakes.
