  • Total Time: 2 hours
  • Yield: 12 servings 1x

Ingredients

Scale

1 tbsp olive oil
1 lb ground beef
1 lb Italian sausage (mild or hot, casings removed)
1 large yellow onion, chopped
4 cloves garlic, minced
2 (28 oz) cans crushed San Marzano tomatoes
1 (6 oz) can tomato paste
1/2 cup water
2 tsp dried oregano
2 tsp dried basil
1 tsp salt, or to taste
1/2 tsp black pepper, or to taste
1 tsp granulated sugar (optional, to balance acidity)
12–15 lasagna noodles (traditional, not oven-ready)
2 lbs whole milk ricotta cheese
1 large egg, lightly beaten
1/2 cup grated Parmesan cheese, plus more for topping
1/4 cup fresh parsley, chopped
4 cups shredded mozzarella cheese, divided

Instructions

Step 1: Prepare the Meat Sauce. In a large, heavy-bottomed pot or Dutch oven, brown the ground beef and Italian sausage over medium-high heat. Use a wooden spoon to break the meat into small, even crumbles as it cooks. Once no pink remains, drain off any excess fat thoroughly. This step is vital for a flavorful, non-greasy sauce that forms the heart of your dish.
Step 2: Sauté Aromatics. Reduce the heat to medium. Add the finely chopped yellow onion and minced garlic to the pot with the browned meat. Sauté until the onion becomes translucent and tender, usually about 5-7 minutes. Be vigilant here; burnt garlic can introduce a bitter note to your otherwise perfect sauce.
Step 3: Simmer the Sauce. Stir in the crushed San Marzano tomatoes, tomato paste, water, dried oregano, dried basil, salt, sugar, and freshly ground black pepper. Bring the mixture to a gentle simmer, then reduce the heat to low. Cover the pot and allow it to cook for at least 1-2 hours, stirring occasionally. The longer this sauce simmers, the more complex and rich its flavors will become, making your ultimate comfort food truly shine.
Step 4: Cook the Noodles. While the sauce is doing its magic, cook the lasagna noodles according to package directions until they are perfectly al dente – firm to the bite but not hard. Drain them well, then rinse immediately with cold water to prevent sticking. Lay the cooked noodles flat on parchment paper or a clean kitchen towel to keep them separated and easy to handle.
Step 5: Prepare the Ricotta Mixture. In a medium mixing bowl, combine the fresh whole milk ricotta cheese, one lightly beaten large egg, grated Parmesan cheese, fresh chopped parsley, a pinch of salt, and a dash of black pepper. Mix everything thoroughly until well combined and creamy.
Step 6: Preheat and Assemble. Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with olive oil or cooking spray. Begin the layering process by spreading about 1 cup of the rich meat sauce evenly on the bottom of the prepared dish. This essential base prevents the bottom layer of noodles from sticking and infuses flavor from the very first bite of your lasagna.
Step 7: First Noodle Layer. Arrange a single layer of cooked noodles over the sauce. You may need to trim some noodles or slightly overlap them to fit your dish, but try to keep overlaps minimal to maintain even thickness throughout the layers.
Step 8: Second Layer: Ricotta, Sauce & Mozzarella. Spread half of the prepared ricotta mixture evenly over the noodles. Follow this with about 1.5 cups of the hearty meat sauce, then sprinkle generously with about 1 cup of shredded mozzarella cheese.
Step 9: Repeat Layers. Place another layer of noodles. Then, add the remaining half of the ricotta mixture, another 1.5 cups of meat sauce, and another 1 cup of mozzarella cheese. Careful layering is key to a visually appealing and delicious final dish.
Step 10: Final Layer. Add the last layer of noodles. Top this with the remaining meat sauce, ensuring all the noodles are completely covered to prevent them from drying out during baking. Sprinkle generously with the remaining mozzarella and a final flourish of grated Parmesan cheese for that classic golden, bubbly crust on your baked dish.
Step 11: Bake Covered. Cover the baking dish loosely with aluminum foil. To prevent the cheese from sticking to the foil, lightly spray the underside of the foil with non-stick cooking spray. Bake for 25 minutes.
Step 12: Uncover and Finish. Remove the foil and continue to bake for another 20-25 minutes, or until the top is beautifully golden brown, the cheese is bubbling vigorously, and the edges are slightly caramelized.
Step 13: Rest Before Serving. Let the completed dish rest for at least 15-20 minutes after taking it out of the oven. This allows the layers to set and firm up, making it much easier to slice neatly and preventing the entire masterpiece from falling apart when you serve it.

Notes

For the best flavor, allow the meat sauce to simmer for at least 2 hours, or even longer. You can prepare the sauce a day ahead. Ensure your ricotta is well-drained to avoid a watery lasagna. Letting the lasagna rest after baking is critical for clean slices.
