Ingredients
1.5 lbs chicken breasts, halved horizontally
1/2 cup grated Parmesan cheese
4 cloves garlic, minced
2 tablespoons butter
1 tablespoon olive oil
1/2 cup chicken broth
Juice and zest of 1 large lemon
1 teaspoon dried oregano
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Step 1: Season the chicken breasts on both sides with salt, pepper, and dried oregano.
Step 2: Heat olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.
Step 3: Add the chicken to the skillet and sear for 5-7 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken from the pan and set aside.
Step 4: In the same skillet, add the remaining tablespoon of butter and the minced garlic. Sauté for 1 minute until fragrant.
Step 5: Pour in the chicken broth, lemon juice, and lemon zest. Use a spatula to scrape the brown bits from the bottom of the pan.
Step 6: Stir in the grated Parmesan cheese and whisk until the sauce is smooth and slightly thickened.
Step 7: Return the chicken to the skillet, spooning the lemon garlic parmesan sauce over the top. Garnish with fresh parsley and serve immediately.
Notes
Ensure your skillet is hot before adding the chicken to get a good sear. Freshly grated Parmesan is key for a smooth sauce.
