Classic Lemon Parmesan Salad

A bright, zesty, and incredibly simple lemon parmesan salad that pairs perfectly with any main course. Made with fresh arugula and shaved Parmigiano-Reggiano.

  • Total Time: 5 minutes
  • Yield: 4 servings 1x

Ingredients

Scale

5 oz Fresh Baby Arugula
1/2 cup Parmigiano-Reggiano, shaved
3 tbsp Extra Virgin Olive Oil
2 tbsp Freshly Squeezed Lemon Juice
1/2 tsp Sea Salt
1/4 tsp Black Pepper
Optional: 1 tsp Lemon Zest

Instructions

Step 1: Wash and thoroughly dry the arugula using a salad spinner to ensure the lemon parmesan salad stays crisp.
Step 2: In a small bowl, whisk together the olive oil, lemon juice, salt, pepper, and lemon zest to create the dressing for your lemon parmesan salad.
Step 3: Place the dried arugula in a large mixing bowl and drizzle with the prepared dressing.
Step 4: Toss the greens gently until every leaf is lightly coated.
Step 5: Use a vegetable peeler to shave the Parmesan cheese over the top and toss one final time before serving your lemon parmesan salad.

Notes

Always use fresh lemons and block Parmesan for the best flavor in this lemon parmesan salad.
