Ingredients
1.5 lbs chicken breast or thighs, cut into 1-inch cubes
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
1 tablespoon coarse ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon kosher salt
Fresh parsley for garnish
Lemon wedges for serving
Instructions
Step 1: In a large mixing bowl, whisk together the olive oil, lemon juice, lemon zest, black pepper, garlic powder, onion powder, and salt.
Step 2: Add the cubed chicken to the bowl and toss thoroughly to ensure every piece is coated. Let marinate for at least 15-30 minutes.
Step 3: Thread the chicken pieces onto skewers, leaving a small gap between pieces for air circulation.
Step 4: Preheat the air fryer to 400°F (200°C). Place the skewers in the basket in a single layer, working in batches if necessary.
Step 5: Cook for 10-12 minutes, flipping the skewers halfway through, until the internal temperature reaches 165°F and the edges are golden brown.
Notes
If using wooden skewers, soak them in water for 20 minutes before air frying. For a ‘wet’ version, toss the cooked skewers in a mix of melted butter and lemon pepper seasoning.
