Ingredients
1 lb pizza dough, room temperature
2 Meyer lemons, sliced paper-thin and seeds removed
2 tablespoons extra virgin olive oil
2 cloves garlic, minced
8 oz fresh mozzarella, sliced or torn
1/4 cup grated Parmesan cheese
1 teaspoon dried oregano
1/4 cup fresh basil leaves
Sea salt and cracked black pepper to taste
Red pepper flakes (optional)
Instructions
Step 1: Preheat your oven to its highest setting (usually 500°F/260°C). If using a pizza stone, place it in the oven to heat for at least 30 minutes.
Step 2: On a lightly floured surface, stretch or roll out the pizza dough into a 12-inch circle. Transfer the dough to a piece of parchment paper or a floured pizza peel.
Step 3: In a small bowl, mix the extra virgin olive oil and minced garlic. Brush this mixture evenly over the surface of the dough, leaving a 1-inch border for the crust.
Step 4: Arrange the fresh mozzarella slices over the dough, followed by the paper-thin lemon slices. Ensure the lemon slices do not overlap too much to allow for even cooking.
Step 5: Sprinkle the grated Parmesan, dried oregano, sea salt, and black pepper over the toppings.
Step 6: Carefully slide the pizza (with the parchment paper if needed) onto the preheated stone or baking sheet. Bake for 10-12 minutes, or until the crust is golden brown and the cheese is bubbly and charred in spots.
Step 7: Remove from the oven and immediately top with fresh basil leaves and red pepper flakes if using. Let it rest for 2 minutes before slicing.
Notes
Using a mandoline for the lemons is highly recommended to ensure they are thin enough to soften during baking.
