Ingredients
1/2 cup fresh lemon juice (from 2–3 large lemons)
1/4 teaspoon lemon zest (optional, from 1/2 lemon)
1/2 cup extra virgin olive oil
1 tablespoon Dijon mustard
1 clove garlic, minced (optional)
1/2 teaspoon sea salt, or to taste
1/4 teaspoon black pepper, freshly ground, or to taste
Instructions
Step 1: In a medium bowl, combine the fresh lemon juice, lemon zest (if using), Dijon mustard, minced garlic (if using), sea salt, and black pepper. Whisk vigorously until all ingredients are well combined and the salt is dissolved.
Step 2: Slowly drizzle in the extra virgin olive oil in a thin, steady stream while continuously whisking. Continue whisking until the dressing is emulsified, thick, and creamy.
Step 3: Taste the lemon vinaigrette dressing recipe and adjust seasonings as needed. You might want more salt, pepper, or a bit more lemon juice for extra tang.
Step 4: Serve immediately over your favorite salads, vegetables, or grilled proteins. Store any leftover lemon vinaigrette dressing recipe in an airtight container in the refrigerator for up to 1 week. Whisk or shake well before each use, as separation is natural.
Notes
For an extra bright flavor, add a touch of fresh lemon zest to the dressing. If you prefer a milder garlic flavor, mince the garlic very finely or use garlic powder instead.
