Ingredients
1 lb ground beef (85/15 lean)
4 large Yukon Gold potatoes, cubed into 1/2 inch pieces
1 medium yellow onion, diced
3 cloves garlic, minced
1 tsp smoked paprika
1 tsp salt
1/2 tsp black pepper
1.5 cups shredded sharp cheddar cheese
4 slices bacon, cooked and crumbled
2 green onions, sliced
1 tbsp olive oil
Instructions
Step 1: Heat olive oil in a large 12-inch skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Once cooked, remove the beef from the skillet and set aside on a plate, leaving the fat in the pan.
Step 2: Add the cubed potatoes to the same skillet. Season with salt, pepper, and smoked paprika. Stir to coat the potatoes in the residual beef fat. Cover the skillet and cook for 5-7 minutes, stirring occasionally.
Step 3: Remove the lid and add the diced onion to the skillet. Continue to cook, uncovered, for another 10-12 minutes or until the potatoes are golden brown and tender on the inside.
Step 4: Stir in the minced garlic and cook for 1 minute until fragrant.
Step 5: Add the cooked ground beef back into the skillet. Toss everything together to combine and ensure the beef is reheated through.
Step 6: Sprinkle the shredded cheddar cheese evenly over the top. Cover for 1-2 minutes until the cheese is melted and bubbly.
Step 7: Remove from heat and top with crumbled bacon and sliced green onions. Serve the loaded ground beef and potatoes skillet immediately.
Notes
For extra crispy potatoes, ensure they are dried with a paper towel before adding them to the skillet.
