Ingredients
1 pound elbow macaroni (or other preferred short pasta)
1/2 cup unsalted butter
1/2 cup all-purpose flour
4 cups whole milk, warmed
4 cups (about 1 pound) freshly grated sharp cheddar cheese
2 cups (about 8 ounces) freshly grated Gruyère cheese
1 teaspoon Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon smoked paprika
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)
Instructions
Step 1: Cook the macaroni according to package directions until al dente. Drain well and set aside. Do not rinse the pasta.
Step 2: In a large, heavy-bottomed pot or Dutch oven, melt the butter over medium heat. Once melted, gradually whisk in the flour. Cook, stirring constantly, for 1-2 minutes until a smooth paste (roux) forms and smells slightly nutty.
Step 3: Slowly pour in the warm whole milk, whisking continuously to prevent lumps. Increase the heat to medium-high and bring the mixture to a gentle simmer, still whisking. Cook until the sauce thickens enough to coat the back of a spoon, about 5-7 minutes.
Step 4: Reduce the heat to low. Add the grated cheeses, a handful at a time, stirring until each addition is fully melted and incorporated before adding more. Continue until all the cheese is melted and the sauce is smooth and creamy. Stir in the Dijon mustard, garlic powder, onion powder, paprika, salt, and black pepper. Taste and adjust seasonings as needed.
Step 5: Add the cooked and drained macaroni to the cheese sauce. Stir gently until all the pasta is thoroughly coated with the rich, luxurious cheese sauce.

Notes
For an extra crispy topping, transfer the mac and cheese to a baking dish, sprinkle with panko breadcrumbs mixed with a little melted butter, and bake at 375°F (190°C) for 20-25 minutes until golden brown and bubbly.
