Ingredients
1.5 lbs (about 680g) firm white fish fillets (e.g., cod, snapper, halibut), cut into 1.5-2 inch chunks
1 tsp salt, plus more to taste
0.5 tsp black pepper, plus more to taste
2 tbsp olive oil or coconut oil
1 large onion, finely chopped
4 cloves garlic, minced
1 inch fresh ginger, grated or minced
1–2 green chilies, deseeded and minced (optional, adjust to taste)
1 tsp ground turmeric
1 tsp ground cumin
1 tsp ground coriander
1 can (14.5 oz / 400g) crushed tomatoes
1 can (13.5 oz / 400ml) full-fat coconut milk
0.5 cup (120ml) fish broth or water
0.25 cup fresh cilantro, chopped, plus more for garnish
1–2 tbsp fresh lime juice, to taste
Instructions
Step 1: Begin by preparing your fish. Cut your chosen firm white fish (such as cod, snapper, or halibut) into 1.5 to 2-inch chunks. Pat them thoroughly dry with paper towels. Season generously with salt and black pepper. Set aside.
Step 2: Heat the oil in a large, heavy-bottomed pot or Dutch oven over medium heat. Once shimmering, add the chopped onion and sauté for 5-7 minutes until softened and translucent, but not browned. Add the minced ginger and garlic, along with the chopped green chili (if using), and cook for another 2-3 minutes until fragrant. Stir constantly to prevent burning.
Step 3: Now it’s time for the spices! Add the turmeric, ground cumin, and ground coriander to the pot. Sauté for about 1 minute, stirring continuously. This step releases their aromatic oils and deepens their flavor. Be careful not to burn them.
Step 4: Pour in the crushed tomatoes and stir well to combine with the aromatics and spices. Bring the mixture to a gentle simmer and cook for 5-7 minutes, allowing the tomatoes to break down and their flavors to meld.
Step 5: Stir in the full-fat coconut milk and the fish broth (or water). Bring the curry back to a gentle simmer, then reduce the heat to low. Let it cook, uncovered, for about 10-15 minutes, stirring occasionally, until the sauce has thickened slightly and the flavors have deepened. Taste and adjust seasoning with salt and pepper as needed.
Step 6: Gently add the fish chunks to the simmering curry, submerging them carefully in the sauce. Do not stir vigorously, as this can break up the delicate fish. Cover the pot and continue to simmer on low heat for 8-12 minutes, or until the fish is opaque and cooked through. Do not overcook the fish.
Step 7: Remove the pot from the heat. Stir in the fresh cilantro and a squeeze of fresh lime juice. Give it a final taste test and make any last-minute adjustments. Ladle your delicious Mallaay Qumbe (Somali Coconut Fish Curry) over a bed of warm basmati rice or with chapati, and garnish with extra fresh cilantro. Enjoy!
Notes
For best results, use fresh, firm white fish. Adjust the amount of green chilies to your preferred spice level. This curry tastes even better the next day!
