Ingredients
2 cups all-purpose flour
1.5 cups granulated sugar
0.5 cup light brown sugar, packed
1 tsp baking soda
2 tsp ground cinnamon
0.5 tsp ground nutmeg
0.5 tsp salt
1 cup vegetable oil
4 large eggs
3 cups carrots, finely grated
1 cup powdered sugar (for glaze)
3 tbsp pure maple syrup (for glaze)
1 tbsp milk (for glaze)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan or line it with parchment paper.
Step 2: In a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking soda, cinnamon, nutmeg, and salt.
Step 3: In a large bowl, beat the eggs and oil until well combined. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 4: Fold in the grated carrots until evenly distributed throughout the batter.
Step 5: Pour the batter into the prepared pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: Allow the bars to cool completely in the pan on a wire rack.
Step 7: In a small bowl, whisk together the powdered sugar, maple syrup, and milk until smooth. Drizzle over the cooled bars.
Step 8: Let the glaze set before cutting into 24 squares and serving.
Notes
Always use freshly grated carrots for the moistest texture. Store in an airtight container for up to 5 days.
