Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch springform or round cake pan. Dust lightly with flour.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
Step 3: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
Step 4: Add the eggs one at a time, beating well after each addition. Stir in the sour cream, 1/4 cup maple syrup, and vanilla extract.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Gently fold in the diced pears.
Step 6: Pour the batter into the prepared pan and smooth the top. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: While the cake bakes, prepare the glaze by simmering 1/2 cup maple syrup and 2 tablespoons butter in a small saucepan over medium heat for 3-5 minutes. Stir in the cream and remove from heat.
Step 8: Allow the cake to cool in the pan for 10 minutes, then pour the warm glaze over the top. Let it cool completely before serving.
Notes
Ensure pears are ripe but firm for the best texture. Use pure maple syrup for the glaze to get the best flavor profile.
