Maple Glazed Pumpkin Bars

Ingredients

2 cups all-purpose flour
1 cup granulated sugar
1/2 cup packed light brown sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves
4 large eggs, room temperature
3/4 cup vegetable oil
1 can (15 oz) pure pumpkin puree
1 teaspoon vanilla extract
1/4 cup unsalted butter (for glaze)
1/2 cup pure maple syrup (for glaze)
1 1/2 cups powdered sugar (for glaze)

Instructions

Step 1: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
Step 2: In a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves until well combined.
Step 3: In a large bowl, beat the eggs, vegetable oil, pumpkin puree, and vanilla extract until smooth and creamy.
Step 4: Gradually add the dry ingredients to the pumpkin mixture, stirring just until the flour disappears. Do not overmix.
Step 5: Spread the batter evenly into the prepared baking pan and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Step 6: While the bars are cooling slightly, melt the butter in a small saucepan over medium heat. Stir in the maple syrup and powdered sugar, whisking until the glaze is smooth and thickened.
Step 7: Pour the warm maple glaze over the bars while they are still slightly warm and spread it to the edges with a spatula.
Step 8: Allow the maple glazed pumpkin bars to cool completely and for the glaze to set before cutting into 16 squares and serving.

Notes

Ensure you use pure pumpkin puree, not pie filling, for the best results.
