1 lb fresh carrots (peeled or scrubbed)
3 tbsp pure maple syrup
2 tbsp extra virgin olive oil
1/2 tsp sea salt
1/4 tsp black pepper
1 tsp fresh thyme leaves
1/2 tsp garlic powder (optional)
Instructions
Step 1: Preheat your oven to 400°F (200°C) and ensure the oven rack is in the middle position.
Step 2: Prepare the carrots by trimming the tops and scrubbing them clean. If they are very thick, slice them in half lengthwise to ensure even cooking.
Step 3: Place the carrots on a large rimmed baking sheet. In a small bowl, whisk together the maple syrup, olive oil, sea salt, pepper, and garlic powder.
Step 4: Drizzle the maple mixture over the carrots and toss well with your hands or tongs until every carrot is thoroughly coated.
Step 5: Spread the carrots out in a single layer, ensuring they are not crowded. Crowding will cause them to steam rather than roast.
Step 6: Roast for 20-25 minutes, tossing them halfway through the cooking time, until they are tender and the edges are beginning to caramelize and turn golden brown.
Step 7: Remove from the oven, sprinkle with fresh thyme leaves while still hot, and serve immediately.
Notes
Use rainbow carrots for a more colorful presentation. Ensure the oven is fully preheated for the best caramelization.
