1.5 cups all-purpose flour

0.5 cup unsalted butter, softened
0.5 cup granulated sugar
0.5 cup pure maple syrup
2 large eggs
0.5 cup sour cream
1.5 cups diced pears (Bosc or Anjou)
Streusel: 0.5 cup flour, 0.5 cup brown sugar, 1 tsp cinnamon, 4 tbsp cold butter
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch springform or cake pan thoroughly.
Step 2: In a small bowl, prepare the streusel by combining the flour, brown sugar, and cinnamon. Cut in the cold butter with a fork or pastry blender until crumbs form.
Step 3: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cinnamon.
Step 4: In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
Step 5: Beat in the eggs one at a time, then stir in the maple syrup and sour cream.
Step 6: Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Step 7: Gently fold in the diced pears and pour the batter into the prepared pan.
Step 8: Evenly sprinkle the streusel topping over the batter.
Step 9: Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Step 10: Allow the cake to cool in the pan for 15 minutes before transferring to a wire rack.
Notes
Use Grade A Dark maple syrup for the best flavor profile. Do not overmix the batter once the flour is added.
