Classic Maple Pecan Bread Pudding

8 cups brioche bread, cubed (approx. 1 lb loaf)
1 cup pecans, roughly chopped and toasted
4 large eggs
1.5 cups whole milk
1 cup heavy cream
3/4 cup pure maple syrup
1 tsp vanilla extract
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
2 tbsp unsalted butter, melted

Instructions

Step 1: Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter or non-stick spray.
Step 2: Spread the cubed brioche bread and half of the chopped pecans evenly into the prepared baking dish.
Step 3: In a large mixing bowl, whisk together the eggs, milk, heavy cream, maple syrup, vanilla, cinnamon, nutmeg, and salt until well combined.
Step 4: Slowly pour the custard mixture over the bread cubes, ensuring all pieces are moistened. Use a spatula to gently press the bread down into the liquid.
Step 5: Drizzle the melted butter over the top and sprinkle with the remaining pecans. Let the mixture sit for 20-30 minutes to allow the bread to soak up the custard.
Step 6: Bake for 40-45 minutes, or until the pudding is set and the top is golden brown and slightly crisp. Serve warm.

Notes

For the best results, use day-old bread. If your bread is fresh, toast the cubes in the oven at 300°F for 10 minutes before starting the recipe.
