Ingredients
3 cups old-fashioned rolled oats
1.5 cups raw pecans, roughly chopped
1/2 cup pure maple syrup
1/2 cup creamy almond butter or peanut butter
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/2 teaspoon sea salt
1/2 teaspoon ground cinnamon
Instructions
Step 1: Preheat your oven to 325°F (165°C) and line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
Step 2: Spread the oats and chopped pecans on a separate baking sheet and toast in the oven for 8-10 minutes until fragrant and golden.
Step 3: In a large mixing bowl, whisk together the maple syrup, nut butter, melted coconut oil, vanilla extract, salt, and cinnamon until smooth.
Step 4: Add the toasted oats and pecans to the liquid mixture and stir until every bit of the dry ingredients is thoroughly coated.
Step 5: Transfer the mixture to the prepared baking pan and press down very firmly using a flat spatula or the bottom of a glass.
Step 6: Bake for 20-25 minutes until the edges are golden brown. The center will still feel slightly soft but will firm up as it cools.
Step 7: Allow the bars to cool completely in the pan for at least 2 hours before lifting them out and slicing into 12 bars.
Notes
Ensure you press the mixture into the pan as hard as possible to prevent crumbling. Store in the fridge for a firmer texture.
