Ingredients
1 cup unsalted butter, softened
1/2 cup granulated sugar
2 cups all-purpose flour
1/2 teaspoon salt
3 large eggs, room temperature
3/4 cup pure maple syrup (Grade A Dark)
3/4 cup light brown sugar, packed
2 tablespoons unsalted butter, melted
1 teaspoon vanilla extract
2 cups pecans, roughly chopped
Instructions
Step 1: Preheat your oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper, leaving some overhang on the sides.
Step 2: In a large bowl, cream together the 1 cup of softened butter and granulated sugar until light and fluffy. Gradually stir in the flour and salt until a crumbly dough forms.
Step 3: Press the dough firmly and evenly into the bottom of the prepared pan. Bake for 15-18 minutes, or until the edges are very lightly browned.
Step 4: While the crust is baking, whisk together the eggs, maple syrup, brown sugar, melted butter, and vanilla extract in a medium bowl until well combined. Stir in the chopped pecans.
Step 5: Pour the pecan mixture over the warm, pre-baked crust and spread it evenly. Return to the oven and bake for an additional 20-25 minutes, or until the filling is set around the edges but still slightly jiggly in the middle.
Step 6: Allow the bars to cool completely in the pan on a wire rack before lifting them out by the parchment paper and cutting them into squares.
Notes
For the best flavor, use pure maple syrup rather than artificial pancake syrup. Ensure the bars are completely cool before slicing to get clean edges.
