Ingredients
225g Medjool dates, pitted and chopped
250ml boiling water
1 tsp baking soda
85g unsalted butter, softened
175g dark brown sugar
2 large eggs
1 tsp vanilla extract
175g all-purpose flour
1 tsp baking powder
100g pecans, toasted and chopped
150ml heavy cream (for sauce)
75g butter (for sauce)
75g dark brown sugar (for sauce)
100ml pure maple syrup (for sauce)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch square baking dish.
Step 2: Place the chopped dates and baking soda in a bowl, pour over the boiling water, and let sit for 15 minutes.
Step 3: Cream together 85g butter and 175g brown sugar until light and fluffy.
Step 4: Beat in the eggs one at a time, followed by the vanilla extract.
Step 5: Gently fold in the flour and baking powder, then stir in the date mixture (including the liquid) and half of the pecans.
Step 6: Pour the batter into the prepared dish and bake for 35-40 minutes until a skewer comes out clean.
Step 7: To make the sauce, combine heavy cream, 75g butter, 75g brown sugar, and maple syrup in a saucepan over medium heat, boiling for 3-5 minutes until thickened.
Step 8: Pour half the sauce over the warm cake, sprinkle with remaining pecans, and serve with the rest of the sauce.
Notes
Always use pure maple syrup for the best flavor; imitation syrup will be too sweet and lack depth.
