Ingredients
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1 cup pumpkin puree (not pie filling)
1/2 cup pure maple syrup
1/2 cup light brown sugar, packed
1/2 cup vegetable oil or melted coconut oil
2 large eggs, room temperature
1 teaspoon vanilla extract
Instructions
Step 1: Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or line it with parchment paper for easy removal.
Step 2: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until well combined.
Step 3: In a large bowl, whisk the pumpkin puree, maple syrup, brown sugar, oil, eggs, and vanilla extract until smooth and fully incorporated.
Step 4: Gradually add the dry ingredients to the wet ingredients. Fold gently using a spatula just until no flour streaks remain. Do not overmix.
Step 5: Pour the batter into the prepared loaf pan and smooth the top with a spatula.
Step 6: Bake for 55-65 minutes, or until a toothpick inserted into the center of the maple pumpkin loaf recipe comes out clean.
Step 7: Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For an extra maple punch, whisk 1/2 cup powdered sugar with 2 tablespoons of maple syrup and drizzle over the cooled loaf.
