Instructions
Step 1: In a large bowl, whisk together flour, brown sugar, baking powder, baking soda, salt, cinnamon, ginger, and cloves.
Step 2: In a separate bowl, mix the pumpkin puree, buttermilk, egg, melted butter, maple syrup, and vanilla until smooth.
Step 3: Pour the wet ingredients into the dry ingredients and stir with a spatula just until combined; do not overmix.
Step 4: Let the batter rest for 5-10 minutes while you heat a non-stick griddle over medium-low heat.
Step 5: Lightly grease the griddle and pour 1/4 cup of batter for each pancake. Cook until bubbles form on top, then flip and cook until golden brown on both sides.
Step 6: Serve immediately with warm maple syrup and extra butter.
Notes
For the flakiest results, ensure your buttermilk and egg are at room temperature. If the batter is too thick, add an extra tablespoon of buttermilk.
