Ingredients
3 very ripe bananas, mashed
1/3 cup melted unsalted butter
1/2 cup pure maple syrup
1 large egg, beaten
1 teaspoon vanilla extract
1 teaspoon baking soda
Pinch of salt
1 1/2 cups all-purpose flour
1/2 cup chopped walnuts, toasted
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 4×8 inch loaf pan with butter or non-stick spray.
Step 2: In a large mixing bowl, mash the ripe bananas with a fork until smooth.
Step 3: Stir the melted butter into the mashed bananas until well combined.
Step 4: Add the maple syrup, beaten egg, and vanilla extract to the banana mixture and whisk well.
Step 5: Sprinkle the baking soda and salt over the mixture and stir it in.
Step 6: Gently add the flour and fold it into the wet ingredients. Do not overmix.
Step 7: Fold in the toasted chopped walnuts.
Step 8: Pour the batter into your prepared loaf pan and smooth the top with a spatula.
Step 9: Bake for 60 to 65 minutes, or until a tester inserted into the center comes out clean.
Step 10: Remove from the oven and let cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For an extra maple punch, brush the top of the warm bread with 1 tablespoon of maple syrup immediately after taking it out of the oven.
