Ingredients
2 cups all-purpose flour
2 tsp baking powder
1/2 tsp salt
1/4 cup granulated sugar
1 1/2 cups buttermilk
2 large eggs
1/4 cup melted butter
1/2 cup chopped walnuts, toasted
2 tbsp pure maple syrup
For Cinnamon Butter: 1/2 cup softened butter, 1 tsp ground cinnamon, 1 tbsp honey
Instructions
Step 1: In a small bowl, whip together the softened butter, cinnamon, and honey until light and fluffy to create the cinnamon butter. Set aside.
Step 2: In a large mixing bowl, whisk together the flour, baking powder, salt, and sugar.
Step 3: In a separate bowl, combine the buttermilk, eggs, melted butter, and maple syrup.
Step 4: Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the toasted walnuts.
Step 5: Heat a non-stick griddle over medium-low heat. Pour 1/4 cup of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
Step 6: Serve the pancakes warm with a generous dollop of the prepared cinnamon butter and extra maple syrup.
Notes
Ensure the walnuts are toasted for the best flavor profile. Do not overmix the batter to keep the pancakes light.
