Ingredients
8 large eggs
1/2 cup good quality mayonnaise
2 tablespoons Dijon mustard
1 tablespoon finely chopped fresh dill
1 tablespoon finely chopped fresh chives
1/4 cup finely diced celery
2 tablespoons finely diced red onion (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
Pinch of paprika, for garnish (optional)
Instructions
Step 1: Place eggs in a single layer in a saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, immediately remove from heat, cover, and let sit for 10-12 minutes. Prepare an ice bath.
Step 2: Using a slotted spoon, transfer eggs to the ice bath. Cool for at least 5 minutes. Crack, peel under cold running water, and roughly chop. Transfer to a medium mixing bowl.
Step 3: In a small bowl, whisk together mayonnaise, Dijon mustard, fresh dill, fresh chives, diced celery, diced red onion (if using), salt, and black pepper until smooth.
Step 4: Pour the dressing over the chopped eggs. Gently fold until eggs are evenly coated. Taste and adjust seasonings. Cover and refrigerate for at least 30 minutes before serving.
Notes
For the easiest peeling, use eggs that are 1-2 weeks old rather than very fresh ones. Adjust the amount of Dijon mustard to your taste; some prefer a stronger tang. Freshly ground black pepper makes a big difference!
