Ingredients
2 cups all-purpose flour
3/4 cup granulated sugar
2 tablespoons high-quality matcha powder
1 tablespoon baking powder
1/2 teaspoon salt
1 large egg, room temperature
1 cup whole milk (or oat milk)
1/2 cup neutral oil (like canola or melted coconut oil)
1 teaspoon pure vanilla extract
Instructions
Step 1: Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or grease with non-stick spray.
Step 2: In a large mixing bowl, sift together the all-purpose flour, granulated sugar, matcha powder, baking powder, and salt to ensure no clumps remain in this matcha muffins recipe.
Step 3: In a separate bowl, whisk together the egg, milk, oil, and vanilla extract until well combined.
Step 4: Pour the wet ingredients into the dry ingredients. Using a spatula, fold gently until just combined; do not overmix the matcha muffins recipe batter.
Step 5: Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.
Step 6: Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
Step 7: Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Sifting the matcha is the most important step to prevent bitter lumps. Use ceremonial grade for a brighter green color.
