1 lb (450g) fresh strawberries, washed and dried
1 cup high-quality white chocolate chips
1.5 tablespoons ceremonial grade matcha powder
1 teaspoon coconut oil (optional, for thinning)
1/2 teaspoon vanilla extract
Instructions
Step 1: Thoroughly wash the strawberries and pat them dry with a paper towel. It is essential that they are completely dry before dipping.
Step 2: Using a double boiler or a heat-safe bowl over simmering water, melt the white chocolate chips and coconut oil together, stirring frequently until smooth.
Step 3: Remove the chocolate from the heat. Sift the matcha powder directly into the melted chocolate to ensure there are no lumps.
Step 4: Add the vanilla extract and whisk the mixture until the color is a uniform, vibrant green.
Step 5: Hold each strawberry by the stem or leaves and dip it into the matcha chocolate, coating it about three-quarters of the way up.
Step 6: Place the dipped strawberries on a baking sheet lined with parchment paper and refrigerate for 15-20 minutes until the coating is firm.
Notes
Always sift your matcha to avoid clumps in the chocolate coating. For the best results, use berries at room temperature.
