Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease two 8-inch round cake pans. Line the bottoms with parchment paper for easy removal.
Step 2: In a medium bowl, sift together the cake flour, matcha powder, baking powder, and salt to ensure no clumps remain.
Step 3: In a large bowl or stand mixer, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
Step 4: Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Step 5: Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the flour mixture, mixing until just combined.
Step 6: Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Step 7: Cool the cakes completely. Prepare the frosting by beating cream cheese, butter, powdered sugar, and cream until smooth. Layer the frosting and sliced strawberries between the cake rounds and finish by frosting the exterior.
Notes
Ensure all ingredients are at room temperature for the smoothest batter. Using ceremonial grade matcha will result in a brighter green color.
