Ingredients
1 tablespoon olive oil
1 medium yellow onion, finely chopped
1/2 green bell pepper, finely chopped
2 pounds ground beef (80/20 lean/fat ratio)
1 cup plain dried breadcrumbs
1 large egg, lightly beaten
1/2 cup milk
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
For the Glaze:
1/2 cup ketchup
2 tablespoons light brown sugar
1 tablespoon apple cider vinegar
Instructions
Step 1: Preheat your oven to 350°F (175°C). Lightly grease a 9×5 inch loaf pan, or line a baking sheet with parchment paper and form the meatloaf into a loaf shape.
Step 2: In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the finely chopped onion and bell pepper. Sauté for 5-7 minutes, or until softened and translucent. Let cool slightly.
Step 3: In a large mixing bowl, combine the ground beef, cooled sautéed vegetables, breadcrumbs, egg, milk, Worcestershire sauce, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix gently with your hands until just combined, being careful not to overmix.
Step 4: Transfer the meat mixture to the prepared loaf pan, or form it into a loaf shape on a parchment-lined baking sheet. Gently press down to ensure it’s evenly distributed.
Step 5: In a small bowl, whisk together the ketchup, brown sugar, and apple cider vinegar until well combined to create the glaze.
Step 6: Pour about half of the glaze evenly over the top of the meatloaf. Reserve the remaining glaze for later.
Step 7: Bake for 45 minutes. Then, remove the meatloaf from the oven and spread the remaining glaze over the top. Return to the oven and bake for another 20-30 minutes, or until the internal temperature reaches 160°F (71°C).
Step 8: Once cooked, remove the meatloaf from the oven. Let it rest in the pan for 10-15 minutes before slicing. This allows the juices to redistribute, ensuring a moist meatloaf.
Step 9: Carefully remove the meatloaf from the pan, slice, and serve hot.
Notes
For best results, do not overmix the meatloaf mixture, and always allow it to rest before slicing to keep it moist. Adjust seasonings to your preference.
