Ingredients
2 (16 ounce) cans refried beans
1 tsp chili powder
1/2 tsp ground cumin
1/4 tsp garlic powder
Salt and black pepper to taste
8 oz cream cheese, softened
16 oz (2 cups) sour cream
2 tbsp fresh lime juice
1 tbsp taco seasoning
3 ripe avocados
1/4 cup finely diced red onion
2 tbsp chopped fresh cilantro (for guacamole)
1 cup salsa (mild, medium, or hot)
1.5 cups shredded Mexican cheese blend (or cheddar/Monterey Jack)
1 cup chopped black olives
1/2 cup sliced green onions (scallions)
1/2 cup diced Roma tomatoes (for garnish, optional)
Additional fresh cilantro (for garnish, optional)
Sturdy tortilla chips, for serving
Instructions
Step 1: In a medium bowl, combine refried beans with chili powder, cumin, garlic powder, salt, and pepper. Mix until well combined and spread evenly as the first layer in a 9×13 inch baking dish or serving platter.
Step 2: In another bowl, beat softened cream cheese until smooth. Add sour cream, fresh lime juice, and taco seasoning. Beat until light, fluffy, and thoroughly combined. Carefully spread this mixture over the refried bean layer.
Step 3: In a separate bowl, mash avocados with 2 tablespoons fresh lime juice, finely diced red onion, and 2 tablespoons chopped fresh cilantro. Season with salt and pepper to taste. Gently spread the fresh guacamole over the sour cream layer.
Step 4: Evenly spread 1 cup of your favorite salsa over the guacamole layer. Ensure any excess liquid is drained from the salsa.
Step 5: Sprinkle 1.5 cups of shredded Mexican cheese blend over the salsa layer.
Step 6: Distribute 1 cup of chopped black olives and 1/2 cup of sliced green onions over the cheese layer.
Step 7: If desired, garnish with 1/2 cup of diced fresh Roma tomatoes and additional chopped fresh cilantro just before serving.
Step 8: Chill the dip for at least 30 minutes before serving to allow flavors to meld and layers to set. Serve with sturdy tortilla chips.
Notes
For best results, prepare this dip a few hours in advance and chill thoroughly. This allows the flavors to meld and makes the layers more distinct and easier to scoop. Always use ripe avocados for the freshest guacamole. When storing leftovers, press plastic wrap directly onto the surface of the dip to minimize air exposure and keep it fresh.
