Mini Pecan Pie Bites

1 (14.1 ounce) package refrigerated pie crusts (2 crusts)
1/2 cup unsalted butter, melted
1 cup light brown sugar, packed
1/4 cup granulated sugar
1/2 cup light corn syrup (or pure maple syrup)
2 large eggs, lightly beaten
1 teaspoon vanilla extract
1 1/2 cups chopped pecans
Pinch of salt

Instructions

Step 1: Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin.
Step 2: Unroll one pie crust onto a lightly floured surface. Using a 2.5-inch round cookie cutter or a small glass, cut out 12 circles. Gently press each circle into the cups of the prepared mini muffin tin. Repeat with the second pie crust for a total of 24 crusts. Prick the bottom of each crust several times with a fork.
Step 3: In a medium bowl, whisk together the melted butter, brown sugar, granulated sugar, corn syrup, eggs, vanilla extract, and salt until well combined and smooth.
Step 4: Stir in the chopped pecans, ensuring they are evenly distributed throughout the mixture.
Step 5: Carefully spoon the pecan filling into each prepared pie crust in the mini muffin tin, filling them about two-thirds full.
Step 6: Bake for 18-22 minutes, or until the crusts are golden brown and the filling is set but still slightly soft in the center when gently jiggled. The tops should be glossy and slightly caramelized.
Step 7: Remove the mini muffin tin from the oven and let the mini pecan pie bites cool in the pan for about 10-15 minutes. This allows the filling to firm up completely.
Step 8: Carefully remove the mini pecan pie bites from the muffin tin using a small offset spatula or knife. Transfer them to a wire rack to cool completely before serving.

Notes

For the best flavor, use good quality pecans and pure vanilla extract. These bites store well in an airtight container at room temperature for up to 3 days or refrigerated for up to a week. They are also freezer-friendly for up to 3 months. If using frozen pie crust, ensure it’s fully thawed but still cold enough to handle without becoming sticky.
