1.5 cups chopped Medjool dates
1 cup boiling water
1 tsp baking soda
1/2 cup unsalted butter, softened
3/4 cup brown sugar
1 large egg
2 tbsp dark molasses
1 tbsp freshly grated ginger
1.5 cups all-purpose flour
1/2 tsp salt
1/2 cup granulated sugar (for syrup)
1/4 cup orange juice
2 tbsp lemon juice
1 tbsp citrus zest
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease an 8-inch square baking dish for the molasses ginger date pudding with zesty syrup.
Step 2: In a bowl, combine the chopped dates, boiling water, and baking soda. Let it stand for 10 minutes to soften the dates for your molasses ginger date pudding with zesty syrup.
