Ingredients
1 1/2 cups Medjool dates, pitted and chopped
1 cup boiling water
1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1/4 cup unsulphured molasses
2 large eggs
1 tsp vanilla extract
2 cups all-purpose flour
1 1/2 tsp ground ginger
1 tsp ground cinnamon
1/2 tsp ground cloves
1 tsp baking soda
1/2 tsp salt
1 cup powdered sugar (for glaze)
2–3 tbsp fresh blood orange juice (for glaze)
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch loaf pan or bundt pan.
Step 2: Place chopped dates in a bowl and pour boiling water over them. Let sit for 10 minutes, then mash or blend into a paste.
Step 3: In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
Step 4: Beat in the eggs one at a time, then stir in the molasses and vanilla extract.
Step 5: In a separate bowl, whisk together flour, ginger, cinnamon, cloves, baking soda, and salt.
Step 6: Gradually add the dry ingredients to the wet ingredients, alternating with the date paste, until just combined.
Step 7: Pour batter into the prepared pan and bake for 40-45 minutes, or until a toothpick comes out clean.
Step 8: Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Step 9: Whisk together powdered sugar and blood orange juice to create a thick glaze. Pour over the cooled cake before serving.
Notes
