Ingredients
2 (16.3 oz) cans refrigerated biscuit dough (like Pillsbury Grands! Flaky Layers)
1/2 cup granulated sugar
2 teaspoons ground cinnamon
1/2 cup (1 stick) unsalted butter
1 cup packed light brown sugar
1/4 cup whole milk or heavy cream
1 teaspoon vanilla extract
Instructions
Step 1: Preheat your oven to 350°F (175°C). Generously grease a 10-12 cup Bundt pan with butter or non-stick baking spray, ensuring all crevices are covered to prevent sticking.
Step 2: In a medium bowl, combine the granulated sugar and ground cinnamon. Stir well to mix.
Step 3: Open the cans of biscuit dough. On a clean surface, cut each biscuit into quarters. If you prefer smaller pieces, you can cut them into eighths.
Step 4: Place the biscuit pieces into the bowl with the cinnamon sugar mixture. Toss gently to coat each piece evenly. You may need to do this in batches if your bowl is not large enough. Ensure every piece is well-dusted.
Step 5: Arrange the coated biscuit pieces evenly in the prepared Bundt pan. Don’t press them down; keep them relatively loose so the caramel can seep through.
Step 6: In a small saucepan, melt the butter over medium heat. Add the packed light brown sugar and milk or cream. Bring the mixture to a gentle boil, stirring constantly until the sugar is dissolved and the sauce is smooth (about 2-3 minutes).
Step 7: Remove the saucepan from the heat and stir in the vanilla extract.
Step 8: Carefully pour the warm caramel sauce evenly over the biscuit pieces in the Bundt pan. Try to distribute it so all pieces get some of the delicious coating.
Step 9: Bake for 35-40 minutes, or until the monkey bread is golden brown on top and cooked through in the center. To check for doneness, a skewer inserted into the center should come out clean (though it will be sticky with caramel).
Step 10: Once baked, remove the Bundt pan from the oven and let it cool on a wire rack for 5-10 minutes. This cooling period is crucial as it allows the caramel to set slightly, preventing all of it from running out immediately when inverted.
Step 11: After cooling, place a large serving plate or platter upside down over the top of the Bundt pan. Carefully but firmly invert the pan and plate together. The monkey bread should release easily. If it doesn’t, give the pan a gentle shake.
Step 12: Serve warm and enjoy! Guests can pull apart the sweet, sticky pieces. Be careful, as the caramel will be hot.
Notes
For an extra nutty flavor, you can add 1/2 cup chopped pecans or walnuts to the bottom of the Bundt pan before adding the biscuit pieces. Ensure your Bundt pan is very well greased to prevent sticking.
