1 oz (28g) dried morel mushrooms OR 8 oz (225g) fresh morel mushrooms
6 cups (1.4L) chicken or vegetable broth, warmed
2 tablespoons olive oil
1 large shallot, finely diced
2 cloves garlic, minced
1.5 cups (300g) Arborio rice
1/2 cup (120ml) dry white wine (e.g., Sauvignon Blanc or Pinot Grigio)
1/4 cup (55g) unsalted butter, cold and cubed
1/2 cup (50g) freshly grated Parmesan cheese, plus more for serving
1/4 cup fresh parsley, chopped (or chives), for garnish

Instructions
Step 1: If using dried morels, place them in a bowl and cover with 1.5 cups of warm water or broth. Let soak for 30 minutes until softened. Strain, reserving the flavorful liquid, and roughly chop the rehydrated morels. If using fresh morels, clean them thoroughly by gently brushing off debris and rinsing under cold water; for very dirty morels, soak briefly in cold, lightly salted water, then rinse and pat very dry. Slice larger fresh morels in half lengthwise.
