16 oz (450g) low-moisture, part-skim mozzarella cheese block, cut into 1/2-inch sticks
1/2 cup all-purpose flour
2 large eggs
1 tbsp milk
1 cup Panko breadcrumbs
1/2 cup Italian seasoned breadcrumbs
1 tsp garlic powder
1/2 tsp onion powder
1/2 tsp dried oregano
1/2 tsp salt, plus more for sprinkling
1/4 tsp black pepper
4–6 cups vegetable oil (or canola, peanut oil) for frying
Marinara sauce, for serving
Instructions
Step 1: Prepare Your Mozzarella Sticks. If using a block of low-moisture part-skim mozzarella, cut it into 1/2-inch thick sticks, approximately 2-3 inches long. Aim for uniformity so they cook evenly.
Step 2: Freeze the Mozzarella. Place the cut mozzarella sticks on a parchment-lined baking sheet and freeze for at least 2 hours, or up to 24 hours. Freezing helps the cheese retain its shape during frying and prevents it from melting too quickly and oozing out prematurely.
Step 3: Set Up Your Breading Station. In three separate shallow dishes: Dish 1: All-purpose flour. Dish 2: Whisk 2 large eggs with 1 tablespoon of milk until well combined. Season lightly with salt and pepper. Dish 3: Combine Panko breadcrumbs, Italian seasoned breadcrumbs, garlic powder, onion powder, dried oregano, a pinch of salt, and black pepper. Mix thoroughly.
Step 4: Double-Bread the Mozzarella Sticks. Working with one frozen mozzarella stick at a time: First, dredge generously in flour, shaking off any excess. Next, dip into the egg wash, ensuring it’s fully coated. Let any excess drip off. Finally, roll thoroughly in the seasoned breadcrumb mixture, pressing gently to make sure the breadcrumbs adhere completely. Repeat the egg wash and breadcrumb steps for a second coating. Place the breaded sticks back on the parchment-lined baking sheet.
Step 5: Second Freeze (Recommended). For ultimate leak protection and crispiness, return the double-breaded mozzarella sticks to the freezer for at least another 30 minutes, or until solid.
Step 6: Prepare for Frying. Pour vegetable oil into a heavy-bottomed pot or Dutch oven until it’s about 2-3 inches deep. Attach a deep-fry thermometer. Heat the oil over medium-high heat until it reaches 350-375°F (175-190°C).
Step 7: Fry the Mozzarella Sticks. Carefully lower 3-4 frozen, breaded mozzarella sticks into the hot oil using tongs. Do not overcrowd the pot. Fry for 1-2 minutes, turning occasionally, until they are golden brown and the cheese is just beginning to bubble slightly at the ends. They cook very quickly!
Step 8: Drain and Serve. Using a slotted spoon or spider, transfer the fried mozzarella sticks to a plate lined with paper towels to drain any excess oil. Immediately sprinkle with a pinch of salt if desired. Serve hot with warm marinara or your favorite dipping sauce.
Step 9: Monitor Oil Temperature. Continue frying the remaining mozzarella sticks in batches, ensuring the oil returns to the ideal temperature between batches.
Notes
For best results, ensure your mozzarella sticks are thoroughly frozen before frying. This prevents the cheese from melting out too quickly. Double-breading provides an extra crispy and protective layer.
