2 cups blanched almond flour
1/4 cup honey or maple syrup
2 tablespoons melted coconut oil
1 teaspoon almond extract
1/2 teaspoon vanilla extract
1/4 teaspoon fine sea salt
1/4 cup shredded coconut or crushed almonds for rolling
Instructions
Step 1: In a large mixing bowl, whisk together the almond flour and sea salt until well combined and no lumps remain.
Step 2: Add the honey, melted coconut oil, almond extract, and vanilla extract to the dry ingredients.
Step 3: Stir the mixture with a spatula until a thick, uniform dough forms. If the dough is too soft, chill it in the refrigerator for 10 minutes.
Step 4: Use a small cookie scoop or tablespoon to portion the dough, then roll into 1-inch balls between your palms.
Step 5: Immediately roll each of the no bake christmas almond balls in shredded coconut or crushed almonds until evenly coated.
Step 6: Place the balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up before serving.
Notes
Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
