2 medium apples, peeled, cored, and diced (e.g., Honeycrisp, Fuji, Granny Smith)
1 tablespoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt

Instructions

Step 1: Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
Step 2: In a large bowl, whisk together the milk, egg, maple syrup, melted butter, and vanilla extract until well combined.
Step 3: In a separate bowl, combine the rolled oats, baking powder, ground cinnamon, ground nutmeg, and salt. Make sure these dry ingredients are thoroughly mixed.
Step 4: Add the diced apples to the dry oat mixture, tossing to coat them lightly. This helps prevent the apples from sinking to the bottom during baking.
Step 5: Pour the wet ingredients into the dry oat and apple mixture. Stir gently until just combined, being careful not to overmix.
Step 6: Transfer the mixture evenly into your prepared 9×13 inch baking dish. Spread it out with a spoon or spatula.
Step 7: Bake for 35-40 minutes, or until the top is golden brown and the oats are set and the edges are bubbling. The center should look firm.
