1.5 lbs boneless, skinless chicken thighs
1 tsp salt, divided
0.5 tsp black pepper
0.5 tsp garlic powder
0.5 tsp paprika
3 cloves garlic, minced
4 cups low-sodium chicken broth
12 oz medium egg noodles
4 tbsp unsalted butter
2 tbsp fresh parsley, chopped (for garnish)

Instructions

Step 1: Pat the chicken thighs dry with paper towels. Season generously on both sides with ½ tsp salt, black pepper, garlic powder, and paprika.
Step 2: Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the seasoned chicken thighs and sear for 3-4 minutes per side, until golden brown. Remove the chicken from the pan and set aside.
Step 3: Reduce the heat to medium. Add the minced garlic to the skillet and sauté for 1 minute until fragrant. Pour in the chicken broth and bring it to a simmer, scraping up any browned bits from the bottom of the pan.
Step 4: Add the egg noodles to the simmering broth, spreading them out. Nestle the seared chicken thighs back into the pan, partially submerged in the liquid.
Step 5: Cover the skillet tightly with a lid or foil. Reduce the heat to low and let it simmer for 12-15 minutes, or until the noodles are tender and most of the liquid has been absorbed and chicken is cooked through (internal temp 165°F/74°C).
Step 6: Remove the pan from the heat. Stir in the butter and remaining ½ tsp salt and fresh parsley until the butter has melted and coated the noodles. Taste and adjust seasonings as needed. Serve immediately.
