Ingredients
1 lb flank steak, thinly sliced against the grain
4 cups cold cooked jasmine rice (preferably day-old)
1 large yellow onion, diced
3 large eggs, lightly beaten
3 cloves garlic, minced
1 tablespoon ginger, grated
3 tablespoons soy sauce
1 tablespoon oyster sauce
1 teaspoon toasted sesame oil
3 green onions, sliced
2 tablespoons vegetable oil
Instructions
Step 1: In a small bowl, whisk together the soy sauce, oyster sauce, and sesame oil. Set aside.
Step 2: Heat 1 tablespoon of vegetable oil in a large wok or skillet over high heat until shimmering.
Step 3: Add the beef slices in a single layer. Sear for 1-2 minutes until browned, then flip and cook for another minute. Remove beef from the pan and set aside.
Step 4: Add the remaining tablespoon of oil to the pan. Add the yellow onions and sauté for 3-4 minutes until softened and lightly browned.
Step 5: Stir in the garlic and ginger, cooking for 30 seconds until fragrant.
Step 6: Add the cold rice to the pan, breaking up any clumps with a spatula. Fry for 3-5 minutes, tossing occasionally, until the rice is heated through and slightly crispy.
Step 7: Push the rice to the sides of the pan. Pour the beaten eggs into the center and scramble until just set, then mix into the rice.
Step 8: Return the beef to the pan and pour the sauce over the mixture. Toss everything together on high heat for 1-2 minutes.
Step 9: Remove from heat, stir in the green onions, and serve immediately.
Notes
Always use cold rice to ensure the grains stay separate and do not become mushy.
