Ingredients
1 cup Medjool dates, pitted and chopped
1/2 cup fresh orange juice
1 3/4 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
1/2 cup honey
2 large eggs, room temperature
1 tbsp orange zest
1 tsp vanilla extract
1/2 cup sliced almonds for topping
Instructions
Step 1: Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
Step 2: In a small bowl, combine the chopped dates and hot orange juice. Let them sit for 10-15 minutes to soften.
Step 3: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
Step 4: In a large bowl, cream together the softened butter and honey until light and airy. Beat in the eggs one at a time, followed by the orange zest and vanilla extract.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the soaked dates along with any remaining juice.
Step 6: Pour the batter into the prepared pan and smooth the top. Sprinkle the sliced almonds evenly over the surface.
Step 7: Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack.
Notes
For extra moisture, brush the warm cake with a mixture of two tablespoons of honey and one tablespoon of orange juice.
