Out of This World Corn Dip

This is the ultimate easy, quick, and undeniably crowd-pleasing corn dip recipe that will be the star of any party. Loaded with sweet corn, creamy cheese, and a hint of spice, it’s an out of this world corn dip quick crowd pleasing sensation!

16 oz cream cheese, softened
1 cup mayonnaise
1/2 cup sour cream
4 cans (15.25 oz each) whole kernel corn, well drained
1/2 cup red onion, finely diced
1 jalapeño, seeded and finely diced (optional, for heat)
2 cups shredded cheddar cheese, divided
1 tbsp chili powder
1 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
Fresh cilantro or green onions, chopped (for garnish)

Instructions

Step 1: Preheat your oven to 375°F (190°C).
Step 2: In a large mixing bowl, combine the softened cream cheese, mayonnaise, and sour cream. Beat with an electric mixer or whisk until smooth and well combined.
Step 3: Add the drained corn kernels, diced red onion, diced jalapeño (if using), 1.5 cups of the shredded cheddar cheese, chili powder, smoked paprika, garlic powder, salt, and black pepper to the creamy mixture. Mix thoroughly until all ingredients are evenly distributed.
Step 4: Transfer the corn dip mixture to a 9×13 inch baking dish. Spread it out evenly. Sprinkle the remaining 1/2 cup of shredded cheddar cheese over the top.
Step 5: Bake for 20-25 minutes, or until the dip is bubbly around the edges and lightly golden on top. If desired, broil for 1-2 minutes for a crispier, darker top, watching carefully to prevent burning.
Step 6: Remove from the oven and let cool for a few minutes. Garnish with fresh chopped cilantro or green onions before serving warm with your favorite dippers.

Notes

For best results, ensure your cream cheese is at room temperature before mixing. This dip can be made ahead of time and reheated. Store leftovers in an airtight container for up to 3 days. Feel free to adjust the spice level to your preference.
