3 sprigs fresh thyme

Instructions

Step 1: Pat pork chops thoroughly dry with paper towels. Season generously on both sides with salt and black pepper. Allow chops to come to room temperature for about 15 minutes.
Step 2: Heat a large, heavy-bottomed skillet (cast iron or stainless steel) over medium-high heat. Add olive oil and heat until shimmering and almost smoking.
Step 3: Carefully place pork chops in the hot skillet. Sear for 3-4 minutes per side until a deep golden-brown crust forms. If your chops are thick, sear the edges for 1 minute each.
Step 4: Reduce heat to medium-low. Add 3 tablespoons of butter, minced garlic, fresh rosemary sprigs, and fresh thyme sprigs to the skillet. Allow butter to melt.
Step 5: Tilt the skillet slightly and use a spoon to continuously baste the melted butter, garlic, and herbs over the pork chops for 4-6 minutes, flipping the chops once halfway through. Continue until internal temperature reaches 145°F (63°C).
Step 6: Transfer the cooked pork chops to a cutting board. Tent loosely with aluminum foil and let rest for 5-10 minutes. This allows the juices to redistribute, ensuring maximum tenderness.
