Ingredients
12 oz spaghetti or fettuccine
4 tablespoons unsalted butter
2 tablespoons olive oil
6 cloves garlic, minced
1/2 cup heavy cream
2 cups fresh baby spinach
1/2 cup grated Parmesan cheese
Salt and black pepper to taste
1/2 cup reserved pasta water
Instructions
Step 1: Boil a large pot of salted water and cook the pasta according to package directions until al dente.
Step 2: While the pasta cooks, heat the butter and olive oil in a large skillet over medium-low heat.
Step 3: Add the minced garlic and sauté for 1-2 minutes until fragrant and golden, being careful not to burn it.
Step 4: Pour in the heavy cream and let it simmer for 2 minutes. Stir in the fresh spinach until it begins to wilt.
Step 5: Reserve 1/2 cup of pasta water, then drain the noodles. Add the noodles to the skillet with the sauce.
Step 6: Toss in the Parmesan cheese and the reserved pasta water. Stir continuously until the sauce coats the pasta evenly. Season with salt and pepper.
Notes
Always use fresh garlic for the best flavor profile. If the sauce is too thick, add more pasta water 1 tablespoon at a time.
