Ingredients
4 large ripe white peaches (peeled and pitted)
1 bottle (750ml) chilled Prosecco DOCG
1 tablespoon fresh lemon juice
1 teaspoon simple syrup (optional)
Fresh raspberries for garnish
Instructions
Step 1: Place the peeled and pitted peaches into a blender or food processor along with the lemon juice.
Step 2: Blend until the mixture is a completely smooth puree. For a professional-grade Peach bellini recipe, press the puree through a fine-mesh sieve into a bowl to remove any solids.
Step 3: Chill the peach puree in the refrigerator for at least 30 minutes until it is very cold.
Step 4: Pour approximately 2 to 3 tablespoons of the chilled peach puree into the bottom of each champagne flute.
Step 5: Slowly top the puree with the chilled Prosecco, pouring down the side of the glass to manage the foam.
