Ingredients
1 stick (1/2 cup) unsalted butter, plus 2 tbsp, melted, divided
2 cups self-rising flour
1/4 cup granulated sugar, plus 1 tbsp for topping (optional)
1/2 tsp ground cinnamon (optional)
1 cup cold buttermilk
1.5 cups diced fresh or thawed frozen peaches
Instructions
Step 1: Preheat your oven to 400°F (200°C). Place 1 stick (1/2 cup) of unsalted butter in a 9×13-inch baking dish and put it in the oven to melt while it preheats. Once melted, carefully remove the dish and swirl the butter to coat the bottom evenly.
Step 2: In a large mixing bowl, whisk together the self-rising flour, 1/4 cup granulated sugar, and ground cinnamon (if using). Ensure there are no lumps and the ingredients are well combined for the perfect peach butter swim biscuits recipe.
Step 3: Pour the cold buttermilk into the dry ingredients. Using a spatula or wooden spoon, mix until just combined. Be careful not to overmix; the dough will be sticky and shaggy, which is ideal for tender biscuits.
Step 4: Gently fold in the diced peaches into the biscuit dough until they are evenly distributed. Again, avoid overmixing to keep the biscuits light and fluffy.
Step 5: Carefully spoon the sticky peach biscuit dough over the melted butter in the baking dish. Gently spread it out into a relatively even layer, ensuring it covers the bottom of the dish.
Step 6: Melt the remaining 2 tablespoons of unsalted butter. Brush or drizzle this melted butter over the top of the biscuit dough. If desired, sprinkle an additional tablespoon of granulated sugar or turbinado sugar over the top for a sparkly crust.
Step 7: Bake for 25-30 minutes, or until the peach butter swim biscuits are golden brown on top and a toothpick inserted into the center comes out clean. Remove from the oven and let cool for a few minutes before serving warm.
Notes
For the best flavor, use ripe, juicy peaches. If using frozen peaches, thaw them and pat dry before adding to prevent excess moisture. Don’t overmix the dough for tender biscuits. These biscuits are best served warm the day they are made, but store well in an airtight container for a few days.
