Instructions
Step 1: Preheat your oven to 350°F (175°C) and line a large baking sheet with parchment paper.
Step 2: In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
Step 3: Beat in the egg and vanilla extract until well combined and smooth.
Step 4: In a separate medium bowl, whisk together the flour, cornstarch, baking soda, salt, cinnamon, and nutmeg.
Step 5: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
Step 6: Gently fold in the finely diced peaches using a spatula until evenly distributed.
Step 7: Chill the dough in the refrigerator for at least 30 minutes to prevent excess spreading.
Step 8: Scoop rounded tablespoons of dough onto the prepared baking sheet, spaced about 2 inches apart.
Step 9: Bake for 10-12 minutes, or until the edges are lightly golden but the centers still look slightly soft.
Step 10: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
Ensure peaches are diced very small to keep the cookie structure intact. Blotting the peaches with a paper towel before adding to the dough can help control moisture.
