Ingredients
1 loaf (16 oz) day-old Challah or Brioche bread, cut into 1-inch cubes
4–5 ripe peaches, peeled, pitted, and sliced (about 3 cups)
8 large eggs
2 cups whole milk (or half-and-half for extra richness)
1/2 cup granulated sugar
1/4 cup packed light brown sugar
2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg (optional)
Pinch of salt
For serving: powdered sugar, maple syrup, whipped cream (optional)
Instructions
Step 1: Lightly grease a 9×13 inch baking dish. Arrange the cubed bread evenly in the prepared dish.
Step 2: In a large bowl, whisk together the eggs, whole milk, granulated sugar, brown sugar, vanilla extract, cinnamon, nutmeg (if using), and pinch of salt until well combined.
Step 3: Pour the egg mixture evenly over the bread, ensuring all pieces are well coated. Gently press down on the bread to help it absorb the custard. Scatter the peach slices over the top.
Step 4: Cover the baking dish tightly with plastic wrap and refrigerate for at least 4 hours, or preferably overnight.
Step 5: When ready to bake, preheat your oven to 375°F (190°C). Remove the dish from the refrigerator and let it sit at room temperature for 20-30 minutes.
Step 6: Bake uncovered for 45-55 minutes, or until golden brown, puffed up, and the center is set. A knife inserted into the center should come out clean.
Step 7: Let the French toast bake cool for 5-10 minutes before serving. Dust with powdered sugar and serve with warm maple syrup or whipped cream, if desired.
Notes
For best results, use day-old bread to ensure proper absorption of the custard without sogginess. This recipe is excellent for meal prepping as it can be assembled the night before. Adjust sugar to your preference based on the sweetness of your peaches.
