Ingredients
4 cups fresh peaches, peeled and diced
1.25 cups granulated sugar, divided
1 tablespoon lemon juice
2 cups heavy cream
1 cup whole milk
1 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
Step 1: In a medium bowl, combine the diced peaches with 1/2 cup of sugar and the lemon juice. Let them sit for at least 30-60 minutes to macerate and release their juices.
Step 2: Using a potato masher or fork, lightly crush about half of the peach mixture to create a variety of textures for your peach ice cream recipe.
Step 3: In a separate large bowl, whisk together the remaining 3/4 cup of sugar, milk, heavy cream, vanilla extract, and salt until the sugar is completely dissolved.
Step 4: Stir the peach mixture (including all the juices) into the cream base. Mix well to ensure the fruit is evenly distributed.
Step 5: Pour the mixture into your ice cream maker and churn according to the manufacturer’s instructions, typically for about 20-25 minutes until it reaches a soft-serve consistency.
Step 6: Transfer the churned peach ice cream recipe into a freezer-safe container and freeze for at least 4 hours or overnight until firm.
Notes
For the best results, ensure your peaches are very ripe. If you don’t have an ice cream maker, you can freeze the mixture in a shallow pan and stir every 30 minutes for 3 hours.
