Ingredients
4–6 ripe peaches
1 cup water
1/2 cup granulated sugar (for peaches)
1 tsp vanilla extract
1.5 cups fresh or frozen raspberries
2 tbsp granulated sugar (for coulis)
1.5 – 2 quarts high-quality vanilla ice cream
Optional toppings: whipped cream, toasted sliced almonds, mini marshmallows, chocolate shavings, fresh mint leaves
Instructions
Step 1: Prepare peaches: Wash and halve peaches, remove pits, and cut each half into 3-4 wedges. You can peel them if desired.
Step 2: Poach peaches: In a medium saucepan, combine 1 cup water, 1/2 cup granulated sugar, and 1 tsp vanilla extract. Bring to a gentle simmer, stirring until sugar dissolves.
Step 3: Add peach wedges to the simmering syrup. Reduce heat to low and poach for 5-7 minutes, or until tender but still firm. Remove with a slotted spoon and cool completely. Reserve poaching liquid.
Step 4: Make raspberry coulis: In a small saucepan, combine 1.5 cups raspberries, 2 tbsp granulated sugar, and 1 tbsp reserved peach poaching liquid. Simmer over medium-low heat for 5-7 minutes until raspberries break down.
Step 5: Press raspberry mixture through a fine-mesh sieve into a bowl to remove seeds. Cool completely.
Step 6: Arrange platter: On a large platter, artfully arrange the cooled poached peach slices.
Step 7: Add ice cream: Place scoops of vanilla ice cream in the center of the platter, or in smaller individual bowls around the platter.
Step 8: Drizzle coulis and add fresh raspberries: Generously drizzle the raspberry coulis over the peaches and ice cream. Sprinkle fresh raspberries (about 1/2 cup) around the platter.
Step 9: Add toppings: Arrange desired optional toppings around the platter for guests to customize their sundaes. Serve immediately and enjoy your Peach Melba Sundae Platter!
Notes
For best results, prepare the poached peaches and raspberry coulis ahead of time and chill them. This allows the flavors to meld beautifully and makes assembly a breeze when it’s time to serve your Peach Melba Sundae Platter. For an extra touch, toast the almonds lightly before serving to enhance their flavor and crunch.
